Merry Christmas to All....

Tonight we had a wonderful Christmas Eve, well, everything was great except for Maya's cold/teething/allergies?? We're still trying to pinpoint what it is that keeps her so congested and "snotty". Maya's asleep now and Nick is getting everything ready for Christmas morning! That means a lot of assembling, sweat, and maybe some frustration. I just finished making our traditional Breakfast Casserole that we have each year on Christmas morning. Here is the recipe, if anyone is intersted....

French crusty bread
6 eggs
1 C. Half and Half
S & P
2 T. Green onions
1 1/2 C. Cheddar cheese
Italian sausages, cooked and crumbled (or you can use the bulk breakfast kind)

Grease a large baking dish (or 2 small dishes, I do this and freeze one of them)Slice the french bread and arrange the pieces in the bottom of the dish. Make sure the entire bottom of the dish is covered with bread, cutting and arranging pieces as needed.
In a bowl, whisk the eggs and half and half together until well blended. Add plenty of salt and pepper.
Add the crumbled sausage and cheese on top of the bread then add the egg mixture and the green onions.

Bake at 350 degrees for 20-30 minutes. It's really good with sour cream and salsa on it! We serve it with some fruit or yogurt.

There is so much excitment in the air and Christmas is just around the corner! Earlier tonight I watched as Nick read stories to Maya and I got teary-eyed looking at the two of them. I feel so blessed to have a wonderful, loving, fun, and kind husband. He is so good to me and I love him so much. Maya is my life and I just love watching her learn and grow every day. I am so grateful my husband encourages me to stay home with her and that we have the means to do so. Even though finances are tight sometimes. :) I know it's worth it.

We also read from Luke and Matthew the story of Jesus' birth. I felt overwhelmed by the spirit as we talked and read about our Savior and his life and mission on this Earth. I am so thankful that he lead the way for us; He truly is the light of the world. I am thankful for a worthy husband who is trying his hardest to better himself and to take care of his family. I am overjoyed right now as I write this. I have so much to be thankful for at this time of year and just wanted to share.
